    Herbalism is definitely a good word for the profession but it doesn't do so much for the action. How bout, extraction or herbal extraction. The act of extracting plants or herbs.

    That wouldn't really apply to picking the plant either. When you think of extraction, it would be more appropriate to think about it in the context of taking coke leaves and mixing them with hydrochloric acid to extract cocaine from the leaves. Or running hot water through coffee beans or tea leaves.

    Harvesting would likely be the best term.

    Harvesting has to do with strictly crops. Extraction usually has to do with pulling, like pulling out plants from the ground.

    Damnit Jim, I'm a science teacher, not an English teacher!

    ...I also can't believe that I have never, ever heard that word before even though I have taken biology courses that extensively featured studies on plants.
